
Preheat oven to 350 degrees.
Brown two sticks of SALTED butter in a small saucepan. Transfer to a large bowl and let it cool slightly.
Whisk in 3/4 cup granulated sugar and 1/2 cup brown sugar to butter. Then stir in 1 tsp vanilla paste, 2 eggs + 1 egg yolk. Mix until fully incorporated and mixture slightly lightens in color.
In a separate bowl, whisk together 270g AP flour, 3/4 tsp salt, and 1/2 tsp baking soda.
Fold in dry ingredients into the butter mixture until mostly incorporated. Then mix in 2 cups of semi sweet chocolate chips until no dry clumps are left.
Form 2 tablespoon sized balls of dough and evenly place on a parchment paper lined baking sheet.
Bake for 6 minutes, remove from oven, bang pan on the counter and sprinkle tops of cookies with flakey salt. Flip baking sheet and bake for another 6-8 minutes, or until edges of cookies are golden but center is still soft!
Let the cookies cool for 2 minutes before transferring to a cooling rack (or eating.)
